Fall in New Mexico doesn’t just mean cooler nights and changing skies—it means Green Chile season. Roasting starts showing up everywhere: at weekend stands, in busy neighborhoods, and outside grocery stores where people gather with the same hopeful question- "What's the harvest like this year? is it hotter this year?"

To many New Mexicans, green Chile is more than a condiment. It’s comfort and connection, tied to family recipes, shared meals, and local pride. It’s the smell of roasting Chile drifting through the air, the tradition of stocking up for winter, and the way one ingredient can instantly feel like home so when the season arrives, it feels like the whole state collectively inhales.
